Healthy Carrot Beans Rice Recipe
Today I'm sharing a kid friendly recipe with leftover rice with carrot and beans because these type of fried rice are very versatile. It can be made with freshly cooked rice for lunchboxes. It only takes few minutes. The dish is made with steam cooked vegetables which are really healthy.

Healthy Carrot Beans rice

Prep Time: 5 mins | Cooking Time: 5 mins | Serves: 2

Ingredients:

Cooked Rice - 2 cups
Fennel seeds / Perunjeeragam - 1 tsp
Carrot - 1, small
Beans - 6
Onion - 1/4 cup
Black Pepper - to taste
Curry leaves - a sprig
Salt - to taste
Oil - little

Method:

Finely chop carrot, beans and spring onion. Steam cook the carrot, beans and keep them aside until ready to use.

Heat a pan, drizzle little oil. Add fennel seeds and curry leaves.

Add chopped onion and saute for a minute. When onion becomes soft, add the carrot, beans, cooked rice. Mix well.

Add in black pepper, salt to taste. Toss well and remove from flame.

Serve!

Note:
  • Fennel seeds gives a unique taste to the rice. If your kids do not like the taste of fennel seeds, you can skip it and make it as a regular fried rice.
  • You can 1/4 tsp of sugar in addition.

Keep all your ingredients ready. Steam cook the carrot and beans.
