Healthy Carrot Beans rice

Ingredients:
Cooked Rice - 2 cups
Fennel seeds / Perunjeeragam - 1 tsp
Carrot - 1, small
Beans - 6
Onion - 1/4 cup
Black Pepper - to taste
Curry leaves - a sprig

Oil - little
Method:
Finely chop carrot, beans and spring onion. Steam cook the carrot, beans and keep them aside until ready to use.
Heat a pan, drizzle little oil. Add fennel seeds and curry leaves.
Add chopped onion and saute for a minute. When onion becomes soft, add the carrot, beans, cooked rice. Mix well.
Add in black pepper, salt to taste. Toss well and remove from flame.
Serve!

Note:
- Fennel seeds gives a unique taste to the rice. If your kids do not like the taste of fennel seeds, you can skip it and make it as a regular fried rice.
- You can 1/4 tsp of sugar in addition.
