This is another variation of coconut chutney. Initially I was making the usual coconut, onion and tomato chutney. And I felt very bored having the same kinds of chutney varieties. So I thought of exploring new and my kind of chutneys. After tasting this, it became a staple dip at our home. It can be used for idli, dosa and vada.
Mint - 1 bunch
Coconut - 1/2 cup
Green chilli - 3
Tamarind - little
Salt - to taste
Oil - 1/2 tsp
Water - as required
Wash and finely chop mint leaves.
Heat oil in a pan, add tamarind and mint leaves and sauté until reduces its volume.
Blend everything into a smooth paste by adding very little water.
Serve with dosa, idly, vada.
