Prep Time: 30 mins | cooking Time: 10 mins | Serves: 4
Ingredients:
Bengal gram flour / Kadalai Maavu - 2 cups
Red chilli powder - 1/4 tsp ( or Pepper powder)
Ajwain - 1/2 tsp
Turmeric - a pinch, optional
Baking soda - 1/2 tsp
Salt - to taste
Water - 1/3 cup, approx
Oil - to deep fry + 3 tblspn
Method:
In
a large mixing bowl, sieve gram flour, add salt, baking soda, ajwain,
chilli powder, asafoetida and turmeric powder. Knead to a soft dough
adding little warm water. Pour 3 tablespoon of oil and knead again for 5 minutes. Keep aside for 20 minutes.
Divide
the dough into equal sized balls. Take a small oval ball, flatten by
pressing with your palms and drag to roll out to a long thin layered
strips.
Deep fry the strips in hot oil over medium flame till it turns crispy.
Serve hot with spicy chutney or fried green chilli.
Note:
- If you feel sticky and difficult to take, dip in oil and roll again.

Knead to a saft dough adding enough warm water |
Add 3 tablespoon of oil and knead again for 5 minutes. Keep it aside for 20 minutes |
Roll the dough and divide into equal sized balls |
Make oval sized dough |
Take one dough and flatten with pressing it with your palm and drag it to get a long thin layered stripes |
Take the thin stripes with a knife |
Flatten the other balls and keep it aside |
Heat oil to deep fry and fry till it becomes crispy |
Drain excess oil and transfer it to a serving plaste |
