Simple Egg Roast

Prep Time: 10 mins | Cooking Time: 15 mins | Serves: 2
Ingredients:
Boiled Egg - 3
Onion - 2
Tomato - 1
Green chilli - 1
Ginger garlic paste - 1 tblspn
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam masala - 1 tsp
Curry leaves - a sprig
Salt - to taste
Oil - 3 tsp
Method:
Boil the egg adding little salt and cut them into small pieces.
Heat little oil in a pan, add in chopped onion and curry leaves. Stir fry for few minutes.
Once onion becomes soft, add in green chilli and ginger garlic paste. Sauté till the raw smell is gone.
Now, add the chopped tomato, chilli powder, coriander powder, garam masala and salt to taste. Sauté till the tomato turns mushy and the masala is nicely blended well.
Then, add the boiled egg pieces and toss well on slow flame for 2 minutes till the egg is well blended with the masala base.
Serve!

Add in slitted green chillies and saute for a minute |
Once raw smell of ginger garlic paste is gone, add in chopped tomato |
Add coriander powder, chilli powder and garam masala |
Salt is added to taste. Salt will make the tomato cook faster |
When the tomato becomes mushy and cooked to desired consistency, add 1/4 cup of water. and cook for 1 to 2 minutes |
Add the chopped egg |
Mix well till the masala is combined well to the egg |
Egg roast is ready to be served! |
