When I think of capsicum potato the tangy flavour comes to my mind. The tanginess of this recipe is perfect complement to recipe. The combination of potato, capsicum and tomato is really excellent. I just love it's texture, flavour and color. It's kind of addictive. Try it, it is really lip-smacking !
Ingredients:
Potato - 2
Onion - 1
Capsicum - 2
Tomato Purée - 4 tblspn
Chilli powder - 1 tsp
Cumin - 1/2 tsp
Mustard seeds - 1 tsp
Curry leaves - a sprig
Salt - as needed
Oil - 1 tblspn
Method:
Boil potatoes and cut them into small cubes.
Chop onions and capsicum.
Heat oil in a wok, add mustard seeds and cumin seeds. When it splutters, add in chopped onions and curry leaves. Saute for a min.
Add in capsicum and saute till it becomes soft.
Then add, tomato puree, chilli powder and salt. Stir well.
Add cooked potatoes and mix well.
Saute for a couple of mins until potatoes are well coated with the tomato.
Serve with rice. Enjoy!
Note:
- You can add 2 chopped tomatoes instead of store bought puree. I always like to add puree since it gives a very nice tangy flavor.
