Bhindi Dopiaza | Ladies Finger Tomato Masala | Vendakkai masala

The word dopiaza means two onions which means large amount of onions are added at two stages during cooking. It is mostly prepared with chicken, mutton and shrimp. Here we are going to prepare it with lady's finger or okra. It goes best with almost everything. Recipe after the jump.


Ingredients:

Ladies finger / Okra - 250 gms
Onion - 2 (large)
Tomato - 1 1/2
Ginger garlic paste - 1 tsp
Garam masala - 1 tsp
Coriander powder - 1 tsp
Chilli powder - 1 tsp
Turmeric - 1/4 tsp
Cumin - 1/2 tsp
Salt - as needed
Oil - 2 tblspn

Method:

Cut the top and bottom of the ladies finger and slit them into two parts or four parts if large.

Chop onions and tomatoes and keep aside.

Heat little oil in a pan and fry ladies finger and transfer to a bowl.

Heat oil in the same pan, add cumin. When it starts to crackle, more than half of the onions. Sauté until it turns golden color.

Add in chopped tomatoes and stir well until it becomes mushy.

Add rest of the onion and stir well till it becomes translucent.

Then add in garam masala, coriander powder, turmeric and salt. Stir well until the raw aroma goes off.

At this stage, add in fried ladies finger and sauté for 2 mins. Check for salt.

Garnish with coriander leaves.

Serve hot with rice or chapati. Enjoy!

Note:
  • Frying ladies finger before adding to the masala is a must.
  • It will avoid it from breaking and half cooked bhindi.
