Ladies Finger Tomato Pachadi | Vendakkai Pachadi

Ingredients:
Ladies finger - 1/4 kg
Tomato - 3 (2, if large)
Onion - 1
Chilli powder - 2 tsp
Coriander powder - 2 tsp
Cumin powder - 1/2 tsp
Turmeric - 1/2 tsp
Salt - to taste
Mustard seeds - 1 tsp
Curry leaves - 2 sprigs
Oil - 2 tblspn
Method:
Chop ladies finger into small pieces. Finely chop tomato and onions.
Heat a pan, add 1 tsp of oil and sauté the ladies finger till the stickiness is gone. Transfer it to a bowl until needed.
Now, heat the same pan, add mustard seeds. Once it starts to splutter, add the chopped onion and curry leaves.
Once onion is sautéed, add the chopped tomato. Cook till it becomes mushy.
When the tomato is cooked, add the coriander powder, cumin powder, chilli powder and turmeric powder. Cook for 1 to 2 mins.
Now, add the chopped ladies finger and salt to taste. Stir fry to mix it well.
Then, add 1.5 cups of water and cook till the ladies finger is done. Add little more water to cook the ladies finger if required. Check for salt and put off the flame.
Serve with rice and your favourite curry.

Now, in the same pan heat little oil and crackle the mustard seeds |
Once mustard seeds starts to splutter, add curry leaves |
Add chopped onion and saute for 2 minutes |
Once the onion is sauteed, add in chopped tomatoes |
Saute till the tomatoes becomes mushy |
Add in coriander powder, chilli powder |
cumin powder, turmeric and salt |
Saute for a minute |
Add in sauteed ladies finger and mix well |
Add 1.5 cups of water |
Check for salt. Cover and cook until the ladies finger is done |
Once cooked, put off the flame and garnish with coriander leaves |
Serve! |
