Pavakkai Puli Kuzhambu
Pavakkai Kuzhambu is one of the recipe which I have cooked before marriage and got appreciated by family members. But I have never tasted it those days. I was afraid of its bitter taste. But soon after marriage I make it as a fry which hubby loves the most. Later I started to like the taste of it. So I thought of making this kuzhambu which I used to cook before. Here is the recipe for my pavakkai kuzhambu. Just give it a try and tell me if you liked it.

Bitter Gourd Kulambu

Pavakkai Kuzhambu

Prep Time: 10 mins | Cooking Time: 40 mins

Ingredients:

Bitter Gourd - 1 or 2
Tamarind - a small lemon sized
Coriander Seeds - 3 tsp
Red chillies - 10
Coconut - 1/2 cup
Small onion / Shallots - 20
Big Onion - 1
Tomato - 1
Green chilli - 2
Turmeric - 1/2 tsp
Salt - to taste
Curry leaves - 2 sprigs
Oil - 1 tblspn
 
Method:
 
In a pan, drizzle little oil and roast coriander seeds and dry red chillies till it changes color.

Take the roasted coriander seeds and chilli in a blender, add onion(shallots) and coconut. Grind it to a smooth paste adding little water.

In a kadai, heat little oil, add in mustard seeds. When mustard seeds starts to splutter, add the sliced big onion and curry leaves. Saute for 2 mins.

Add in chopped bitter gourd and stir fry for 2 mins. So that the bitter gourd will get cooked slightly.

Add in chopped tomatoes and slitted green chillies. Saute till tomatoes turn mushy.

Now, add the ground masala, tamarind extract, turmeric, salt and enough water. Cover and cook for 20 to 30 mins.

The kuzhambu will reduce a bit. Put off the flame.

Serve!

Keep all your ingredients ready
roast coriander seeds
In a pan, drizzle little oil and roast coriander seeds and dry red chillies until it changes color. Cool them a bit
grind well
Take them in a blender, add small onion and grind till smooth
add coconut
Once it becomes smooth add in grated coconut
grind to a smooth paste
Add little water and blend well till you get a smooth paste
pop mustard seeds
In a kadai, heat little oil. Add in mustard seeds
saute onion
When mustards starts to pop, add chopped onion and curry leaves. Saute till onion becomes soft
bitter gourd added
Now, add in chopped bitter gourd and saute for 2 mins
tomato, green chilli
To this, add chopped tomatoes and slitted green chillies. Stir fry till tomatoes turn mushy
add in ground masala
Once tomato becomes mushy, add the ground paste
tamarind extract
tamarind extract is added immediately
turmeric, salt
turmeric and salt goes into this
enough water
Add enough water to the it
cover and cook
Cover with a lid and cook on medium flame for 20 too 30 mins
reduced kuzhambu
After 30 mins, it will reduce a bit
