Goli Baje | Mangalore Bajji Recipe

Ingredients:
Maida - 1 cup
Rice flour - 2 tblspn
Green chilli - 2
Ginger - 1 inch piece, finely chopped
Asafoetida / Perungayapodi - a pinch
Cumin seeds - 1 tsp
Coconut - 2 tsp, grated
Curd - 1/2 cup
Curry leaves - 1 sprig
Coriander leaves - 2 tblspn
Baking Soda - 1/2 tsp
Salt - to taste
Sugar - 1/2 tsp
Oil - to deep fry
Method:
In a large mixing bowl, take maida,rice flour, salt, sugar, asafoetida and baking soda. Mix well to incorporate properly.
Add finely chopped ginger, cumin, green chillies, grated coconut, curry leaves and coriander leaves.
To this add curd and beat well to make a thick batter. Allow it to rest for 30 minutes.
Heat oil to deep fry. Once the oil becomes hot, keep it in medium flame and drop a small scoop of batter. To check if the oil is ready drop a small piece of batter, its should raise immediately to the top.
Fry till golden brown and remove from flame. Serve immediately with hot tea.

Note:
- Ferment for atleast 20 to 30 minutes for a nice round shaped bonda.

Mix well. Add little water if required. Check the consistency of the batter. Keep aside for 30 minutes |
Just before frying, add some chopped small onion |
Heat oil to deep fry and drop little batter |
Fry till golden brown |
Serve hot! |
