Pudalangai Poriyal
Snake gourd Kootu

Prep Time: 10 mins | Cooking Time: 15 mins | Serves: 3
Ingredients:
Snake gourd - 1
Channa dal / Kadala Paruppu - a fistful
Onion - 1
Mustard seeds - 1 tsp
Curry leaves - a sprig
Salt - to taste
Oil - 1 tblspn
To grind:
Coconut - 1/4 cup
Garlic - 5
Red chilli powder - 3/4 tsp
Turmeric - 1/4 tsp
Cumin seeds - 1 tsp
Method:
In a pressure cooker, take finely chopped snake gourd, channa dal and salt. Cook for 2 whistles.
In a blender, take coconut, cumin, turmeric, chilli powder and garlic. Blend to a smooth paste.
Heat little oil in a kadai, add mustard seeds. When mustard starts to splutter, add finely chopped onion and curry leaves.
Once onion turns translucent, add the cooked snake gourd. Sauté for 30 seconds.
Add in the ground paste and little salt as we have added already while cooking snake gourd. Cook for 5 mins. Switch off the flame.
Serve with rice.

Scrap the skin of snake gourd |
Deseed and chop them into small pieces |
Take chopped snake gourd, channa dal and little water in a pressure cooker. Pressure cook for 2 whistles |
Once pressure subsides, discard excess water. Keep it aside |
In a blender, add coconut, chilli powder, turmeric, garlic and grind it to a smooth paste |
Heat little oil and crackle some mustard seeds |
Add in chopped onion and curry leaves. Stir till onion turns soft |
Now, add in cooked snake gourd dal and saute for few seconds |
Add in ground paste to this |
and little salt. Mix everything and cook for 3 to 5 mins |
Its ready, put off the flame |
Serve with rice... |
