Srivilliputhur Palkova Recipe
Palkova / Thirattipal is a famous traditional sweet from Srivilliputhur inTamil Nadu. This sweet requires no special ingredients. It can be made with just two ingredients. The milk is slowly cooked in low flame with constant stirring. As soon as the khoya stage is reached sugar or jaggery is added. The process of making this sweet is so simple, the only thing is it needs lots of patience.
You can also use store bought khoya so that you can make the sweet in just 5 minutes. Some people use condensed milk. If making with condensed milk method, we do not want to add any sugar.

Ingredients:

Full Cream Milk - 1 liter
Sugar - 100 gms (3/4 cup)

Method:

In a wide bottomed vessel, take milk and bring it to boil.

Once the milk boils, keep the flame in low to medium. Keep stirring constantly for every 1 to 2 mins to avoid sticking and burning on the bottom of the pan.

Scrap the sides of the pan with a spatula and add it to the milk.

On continuous the milk will starts to reduce in quantity and will start to thicken.

After 45 mins, the milk will start to solidify. At this stage, add the sugar and mix it well. Keep stirring.

Once it leaves the sides of the pan, remove from flame. Cool it and store.

Note:
  • Store it in refrigerator for 5 days.
  • Use full cream milk.
  • Stir constantly to avoid sticking to the bottom and overflowing of milk.
  • Keep the flame in low to medium.
  • The time to prepare varies with the size of the pan and the milk used.
  • You can also use khoya to prepare this.

Keep all your ingredients ready
bring it to boil
Boil the milk. Once it boils, turn the flame from high to medium
keep stirring
Keep stirring for every 2 mins to avoid burning on the bottom
scrap the sides
Scrap the sides of the vessel and add it to the milk

After 45 min, the milk begin to solidify
add sugar
At this stage, add the sugar. Adjust according to your taste from 1/2 cup to 1 cup. 3/4 cup is normal

Keep stirring continuously
it leaves the pan
As soon as it leaves the pan and get a non sticky kova, put off the flame
Homemade Palkova
Serve!
