Tomato Rice

Ingredients:
Rice - 3 cups, cooked rice
Tomato - 5
Onion - 1, large
Green chilli - 3
Ginger garlic paste - 1/2 tsp
Garam masala - 1/4 tsp
Chilli powder - 1/2 tsp (varies with the spiciness from green chilli)
Turmeric - a pinch
Curry leaves - 2 sprigs
Mustard seeds - 1/2 tsp
Salt - to taste
Oil - 2 tblspn
Method:
Cook the rice adding little salt so that it will be ready before making the tomato thokku.
Finely chop tomatoes. Cut onion into slices and slit the green chillies.
Heat
oil in a pan over medium flame, add mustards seeds. Once mustards
starts to splutter, add in slitted green chillies, onion and curry
leaves. Sauté till onion becomes translucent.
Add the ginger garlic paste and sauté till raw smell goes off. Then add in finely chopped tomatoes and sauté for 2 mins.
Add in chilli powder, garam masala, turmeric and salt. Cook till tomatoes becomes soft.
Add little water and cook for a minute. Check for salt. If you have added salt in rice while cooking add less salt for tomatoes. Put off the flame.
Add the prepared paste to the rice and mix it till all rice are coated evenly with the masala. Garnish with some coriander leaves.
Serve with onion raita.
Note:
- Adjust red chilli powder according to your taste.
- Adding garam masala is optional. It gives a nice flavor.
