Masala Egg Adai

Egg - 4
Coconut - 1/2 cup
Small onion / Shallots - 10
Red chilli - 5
Turmeric - 1/4 tsp
Salt - to taste
Oil - 2 tblspn
Heat few drops of oil and slightly fry red chilli.
Grind together coconut, red chilli, onion and salt without adding water.
In a large bowl, crack the egg and add the ground coconut mixture into it. Whisk it well until everything is combined well.
Heat griddle, add little oil oil and pour a ladleful of egg mixture in it.
When one side is cooked flip it to the other side. When the other side is cooked remove from flame.
- Red chilli should be slightly roasted in oil to avoid the raw smell.
- Cooking till it turns brown, otherwise you may feel the raw onion smell.
|Keep all your ingredients ready|
|Crack the eggs in a large bowl|
|In a blender, take coconut, onion, red chilli, turmeric and salt|
|Grind them into a coarse paste without adding water|
|Add the ground mixture into the egg|
|Whisk it to combine everything.|
|In a skillet drizzle little oil and pour a ladle full of egg mixture|
|Let the egg cook for sometimes till the bottom becoming golden brown|
|Flip to cook on the other side|
|When both the sides are cooked remove from the skillet|
|Transfer it to a serving bowl. It goes well with anything specially pulikuzhambu|
