Spinach and Peas Fried Rice

Cooked Rice - 2 cups
Peas - 1 cup
Onion - 1
Spinach - 2 cups, chopped
Green chilli - 1
Ginger - 1/2 tsp
Garlic - 1 tsp
Soy sauce - 1 tsp
Black Pepper - 1 tsp, (adjust to taste)
Spring onion / Coriander leaves - 1 tblspn
Salt - to taste
Sugar - 1/4 tsp
Oil - 2 tblspn
Cook the basmati rice adding salt and allow it to cool. Once cooled, fluff the rice and set aside.
Heat oil in a pan, add finely chopped ginger and garlic.
Add in chopped green chilli, onion and cook till it becomes soft.
Add the peas and chopped spinach. Stir fry for few mins. Add little salt and sugar. We have already added salt for rice, so add little salt.
When the spinach leaves wilts, add the cooked rice and mix well.
Now, add soy sauce and pepper powder. Toss well to mix properly.
Add spring onion green and toss again. Serve :)
If you don't like to add soy sauce replace it with lemon juice.
|Soak basmati rice for 20 mins and cook adding salt. Fluff it once cooled. I missed green peas in the picture|

|Once it browns, add in chopped onion and green chilli. Stir fry till onion becomes soft|
|Now, add the palak leaves and green peas. Saute for few mins|
|Add sugar and salt. Saute till the leaves start to wilts|
|Add in cooked rice and mix well|
|Add in soy sauce|
|add in freshly ground black pepper|
|Toss well so that it gets mixed evenly|
