Dragon chicken is an Indo-Chinese dry chicken usually served as a appetizer. It is loaded with lots of flavor and has a richness of cashew. It is a spicy stir fry dish which is made with some of the common ingredients that are easy to find and many of them may already have on hand.
Dragon Chicken Recipe

To marinade and fry:
Boneless Chicken - 1/4 kg
Corn flour - 2 tblspn
Maida - 1 tblspn
Egg white - 1, optional (used for softness)
Ginger garlic paste - 1 tsp
Black pepper - 1/2 tsp
Red chilli powder - 1 tsp
Salt - to taste
Oil - to fry
Red chillies - 2, broken
Ginger - 1 tblspn
Garlic - 1 tblspn
Cashews - 15
Capsicum - 1
Onion - 1, medium sized
Carrot - 1/4, julienned
Sugar - 1 tsp
Kashmiri Chilli Powder - 1 tsp
Tomato ketchup - 2 tblspn
Red chilli Sauce - 2 tblspn
Soy sauce - 1 tsp
Vinegar - 1 tsp
Spring onion green - to garnish
Cut the chicken into long thin strips. Julienne the capsicum, carrot and onion. Finely chop spring onion green.
In a bowl, marinade chicken with ingredients listed under to marinade and fry. Mix them coat evenly and deep fry them till golden brown.
Heat a wok, add broken red chilli, ginger, garlic. Once the nice aroma comes out, add the cashews.
Add the chopped onion, sauté for 30 seconds. Add the julienned capsicum and carrot and let them cook for a while.
Now, add sugar salt, red chilli powder, tomato sauce, red chilli sauce, soy sauce and vinegar one by one. Add little water or chicken stock. Cook for a min.
Then, add the fried chicken and toss them well. Garnish with spring onion and remove from flame.

|Other ingredients for dragon chicken. Julienne the carrot and capsicum, slice the onions and finely chop ginger and garlic|
|Cut the chicken into thin long stripes. Boneless chicken is much preferred|
|In a large mixing bowl, take chicken and all the ingredients listed to marinade.|
|Combine everything together. Marinade the chicken for 30 mins|
|Heat oil in a deep frying pan over medium high flame. Add the marinated chicken and fry till golden brown|
|Once fried transfer it to a bowl.|
|Heat oil in a wok, add broken red chillies.|
|Finely chopped ginger and garlic goes into this|
|Once they become brown add cashew and roast it|
|Add sliced onion and saute for 30 seconds|
|Add in julienned capsicum and carrot. Stir fry for 1 to 2 mins|
|When capsicum is slightly cooked add sugar|
|Immediately add chilli powder|
|Now, all the sauces goes in(chilli sauce, soy sauce, tomato sauce and vinegar)|
|Add little water or chicken stock and cook for a min|
|Add the fried chicken and toss well to coat evenly|
|Garnish with spring onion greens and put off the flame|
