Today I'm sharing with you the most easy rice you will ever find. Yeah, it's lemon rice, an easy south Indian delicacy which is flavored with the tanginess of lemon. If you have leftover rice
at home, it can be prepared in less than 5 minutes. Also, it is made
with very simple ingredients which will be always available at home. So
we can enjoy this recipe any time. It's one of the best lunch box
recipe.
Lemon Rice
Ingredients:
Rice - 2 cup
Lemon - 2
Red Chilli - 4
Green Chilli -3
Mustard seeds - 1/2 tsp
Urad dal - 1 tsp
Channa dal / Kadalai Paruppu - 1 tblspn
Peanuts - 2 tblspn
Turmeric - 1/2 tsp
Curry leaves - 1 sprig
Salt - to taste
Sesame oil - 2 tblspn
Method:
Cook rice adding a tsp of oil and salt. Spread them in a wide plate or a large bowl. Drizzle little oil, mix them well and keep aside.
Squeeze lemon and extract its juice. Remove any seeds present in them. Chop red chilli and green chilli.
Heat
oil in a pan, add mustard seeds. When it begins to splutter, add urad
dal, channa dal, peanuts, red chilli and green chilli and curry leaves.
Fry till it becomes golden. Do not let them burn.
Add in turmeric and switch off the flame. When it is slightly cooled, add the lemon juice and pour this mixture over the rice. Mix them carefully. Check for salt.
Serve with coconut thogayal or potato roast.
Note:
- Adding lemon juice when hot will give you a bitter taste.
- You can also directly add lemon juice while mixing.
- Adjust lemon juice according to taste.
- Adding more chillies gives an nice taste

Add in chopped green chilli and red chilli |
Then, add urad dal and channa dal. Do not let everything burn |
Add in turmeric and saute for few seconds |
Switch off the flame and add the squeezed lemon juice. If you add lemon juice while it is in flame, lemon rice may turn bitter |
Pour this over the rice |
Mix well |
