Green chilli - 2, slitted lengthwise
Ginger garlic paste - 1/2 tsp
Water - 1.75 cup for pressure cooker and 2 for pot method
Salt - to taste
Oil - 2 tblspn
Ghee - 1 tblspn

Spices:

Cinnamon - 2 inch stick
Cloves - 3
Cardamom - 3

Method:

Wash and rinse the basmati rice till a clear water is seen and soak it for 20 to 30 mins.

Chop the onion into thin slices and slit the green chilli.

Heat a pressure cooker, add ghee and oil. Once it becomes hot, add the whole spices mentioned above.

When a nice aroma comes, add slitted green chilli and sliced onion. Stir fry the onion for 2 minutes.

Add in ginger garlic paste and sauté to get rid of its raw smell.

Drain excess water from the rice and to this add drained rice, green peas and salt. Stir well for a minute. Add 1.75 cup of water and cover it with a lid.

Pressure cook the rice for 2 whistles over a medium flame. When the pressure subsides, fluff it with a spoon.

Serve with your favourite accompaniment.

Note:
  • If cooking on a pan, the measurement of rice and water is 1:2 ratio. And when the water starts to boil, reduce the flame to low and cover it with a lid. Check after 10 to 15 mins. Cook till the water is absorbed.
  • Ratio of rice and water in pressure cooker is 1:1.5
