Pineapple Kesari Recipe
Pineapple kesari is a popular sweet recipe usually served in many events like wedding, house warming etc. It is a crowd pleaser and tastes absolutely heavenly. It is full of flavors of pineapple. The fact that you can prepare this sweet early was a huge advantage when you are planning for any occasions. It tastes more delicious when prepared in advance.

Pineapple Kesari

Prep Time: 10 mins | Cooking Time: 15 mins | Serves: 3

Ingredients:

Rava - 1 cup
Pineapple - 1 cup
Sugar - 1 cup
Cashews - 10 to 15
Raisin - 1 tblspn
Cardamom - 3
Food color - a pinch
Ghee - 1/4 to 1/2 cup
Water - 3 cups

Method:

Chop the pineapple into small cubes.

Hear 1 tablespoon of ghee, add cashews and raisins. Roast till the cashew becomes brown and raisin puffs up. Transfer it to a bowl.

Heat little ghee and roast the rava for 3 to 4 minutes on low flame till a nice aroma comes out. Transfer it to a plate.

In a vessel, take 3 cups of water and bring it to boil. Add chopped pineapple pieces, food color and cook for 5 minutes.

When it is 3/4th done turn the flame to low and add in the roasted rava. Stir well to avoid lumps. Cover and cook for 4 to 5 minutes.

When it becomes almost dry, add the sugar and mix it. As the sugar melts it will turn watery again.

Add in cashew, raisin, cardamom powder. When it thickens, switch off the flame.

Note:
  • You can also add puréed pineapple. But if you are puréeing, it is not necessary to cook in advance.
  • Also, tinned pineapple can be added be added. Here also boiling it is not required.

When it is 3/4th done turn the flame to low and add in the roasted rava.

Stir well to avoid lumps.

Add in cashew, raisin, cardamom powder.
