Spicy Onion chicken roast is really a simple, hot chicken dish that can go well with almost everything. Last weekend, I have been feeling very lazy to cook but my hubby bought some chicken. I also crave for something spicy. So, I made this super easy delicious chicken dish. All you need is a spicy onion paste which acts as a great base to make this finger licking good dish.
It is an super easy recipe to do. You can serve this chicken roast with rice, rasam or paruppu kuzhambu. It is also a great combination for chapati, idly or dosa.
Spicy Onion Chicken Roast
Ingredients:
Chicken - 1/2 kg
Black stone flower / Kalpasi - 1
Salt - to taste
Sesame Oil - 2 tblspn
To roast and grind:
Shallots / Small Onions - 1 cup
Coriander seeds - 4 tsp
Red Chillies - 10 to 15
Ginger - 2 inch piece
Garlic - 15 cloves
Fennel seeds - 1 tblspn
Method:
Heat a pan, drizzle little oil. Add the ingredients listed under"to roast and grind". Cool down and grind it to a smooth paste.
Heat oil in the same pan, add the chicken pieces and stir fry for 2 to 5 mins.
Now add the ground masala, kalpasi, curry leaves, salt and stir well to incorporate.
Add in 1.5 cups of water. Check for salt and cover with a lid.
When the chicken gets cooked and becomes dry, garnish with coriander leaves and switch off the flame.
Note:
- Use chicken with some bones.
- Adjust the amount of red chillies according to the spiciness required. I reduced the number of chillies for the sake of my kid.
- Consistency of the chicken can be either dry or semi gravy.
