Omapodi / Plain sev is a quick savory snack which is liked by kids. It is made with bengal flour for evening tea time or as diwali snacks. I mostly make for my sons snack box. Prep Time: 10 mins | Cooking Time: 10 mins | Makes: 2 cups

Ingredients:

Bengal gram flour / Kadalai Maavu - 1 cup
Rice flour - 1/4 cup
Ajwain / Omam - 1 tblspn
Asafoetida - a pinch
Butter - 1 tblspn
Hot oil - 1 tsp
Salt - to taste
Oil - to deep fry

Method:

Dry roast omom in a pan for 2 mins. Pound the roasted omam using mortar and pestle. Soak it in 1/4 cup of water for 15 mins. Extract the juice.

Sieve besan flour, rice flour to avoid lumps. Add asafoetida, butter, salt, hot oil and mix it well.

Now, add the ajwain(omam) water and knead it to a soft dough. little by little otherwise it will become sticky. We can also add little soaked ajwain if required.

Heat oil in a frying pan, wait until it becomes hot.

Meanwhile, grease the sev/murukku press with little oil and fill the dough. When the oil becomes hot keep it in a low flame and start pressing the sev directly in the oil. Do not overcrowd the oil with the sev.

When the bubbles around the sev stops, transfer them to a plate. Make sev out of remaining dough in the same way.

Enjoy with tea!

Note:
  •  For bright yellow color add turmeric, otherwise it will be like mine

Keep all your ingredients ready
roast and crush ajwain

Soak the crushed ajwain for 15 mins
seive flours
Sieve the besan flour, rice flour asafoetida and salt to avoid lumps
rub with butter
Add  butter to it and rub well so that it is combined well
add ajwain water
Now, add the ajwain(omam) water and knead it to a soft dough.
Add water little by little otherwise it will become sticky. We can also add little soaked ajwain if required.
hot oil
Now, add the hot oil to the dough and knead it
press it
Heat oil in a frying pan, wait until it becomes hot. Meanwhile, Grease the sev/murukku press with little oil and fill the dough. When the oil becomes hot keep it in a low flame and start pressing the sev directly in the oil. Do not overcrowd the oil with the sev.

flip it
Flip it to the other side when one end is cooked
bubbles stops
When the bubbles around the sev completely stops remove from the flame
drain oil
Drain excess oil
Transfer it to a bowl
