Nuts Powder

Ingredients:
Almond / Badam - 1 cup
Pistachio - 1/2 cup
Cashew nut - 1/2 cup
Cardamom - 3 to 4
Brown sugar - 1 cup
Saffron - few strands
Method:
In a vessel bring water to boil. Once it begins to boil, switch off the flame and remove from flame. Soak the almonds in the hot water and keep aside for 5 to 10 minutes.
Meanwhile, dry roast the pistachio and cashew nuts separately till it changes color over medium flame. Do not roast for a long time, as the nuts will begin to release oil.
Now, peel the skin of almond and dry it with a kitchen towel. Roast the almond for few minutes.
Take the roasted almond, cashew nut, pistachio in a mixer jar and make few pulses. Do not run the mixer continuously as the nuts will release oil and becomes sticky.
Once the nuts are ground, add in cardamom, saffron and brown sugar. Make few pulses.
Store it in a airtight jar.
Note:
- You can replace the brown sugar with normal sugar, jaggery or any of the alternatives.
- You can also skip the sugar and mix it later while making the drink.
- This can be used in milk, kheer and to make nuts balls.
