Homemade Biryani Masala

Today's recipe is one of the basic recipe - biryani masala powder. Its an aromatic blend of spices which can be used for any kind of biryanis. Can we make biryani without biryani masala? If you ask me i would probably say, Yes, you can! Yeah, we can also make biryani without biryani masala powder. 

The thing is we should add coriander masala, chilli powder, cumin powder, garam masala and other spices separately while making it. If adding this powder, you can reduce the amount of some of the spice powders.
Biryani Masala Powder Recipe
Check the recipe below for biryani masala powder. When you prepare biryani, use 1 to 3 teaspoon of this powder according to the need.

Biryani Masala Powder

Ingredients:

Coriander seeds - 3 tblspn
Fennel seeds - 2 tblspn
Red chilli - 5
Black cardamom - 3
Green cardamom - 6
Cloves - 1/2 tsp
Cinnamon stick - 2 to 3
Bay leaf - 2
Star anise - 2
Black pepper - 1 tsp
Cumin - 1 tsp
Stone flower - 1 tsp
Marati Mukku / Kabok buds - 1 tsp
Nutmeg - 1
Mace - 3

Method:

Dry roast fennel, star anise, cumin, black pepper, cinnamon stick, cloves, cardamom, coriander seeds till it changes color a bit. Transfer it to a plate.

Now in the same pan, dry roast black cardamom, nutmeg, Kabok buds, red chilli, bay leaf, mace, stone flower.

Cool down and grind it to a smooth powder. Store it in a air tight container. Use 1 to 2 tsp of biryani masala powder for making biryanis.

Keep all your ingredients ready
Dry roast fennel, star anise, cumin, black pepper, cinnamon stick, cloves, cardamom, coriander seeds
until coriander seeds changes color a bit. Do not roast till it turns dark
Now dry roast the other ingredients
Black cardamom, nutmeg, Kabok buds, red chilli, bay leaf, mace, stone flower
Cool down a bit
Grind it to a fine powder and once cooled store it in a air tight container
