Baingan bharta is a popular Bengali dish. It is also a national cuisine in Pakistan and Bangladesh. The word baingan means "brinjal" and bharta means "mashed". This dish is made of mashed brinjal along with some spices. This is one of a simplest recipes as we are adding only the ready made spice powders. As the brinjal is roasted in direct flame it gives a little bit smoky flavor to this recipe. You can also simplify this recipe by not adding some spice powders like cumin powder and coriander powder.

In our home town, we make similar recipe by roasting brinjal in coal. We add some raw onions, chillies and tamarind extract which gives a nice taste when eaten with plain rice. It is one of the simplest side dish prepared by our granny's on a lazy day. I will post the recipe in future. Here we go to the recipe of baingan bharta.
Baingan Bharta
Ingredients:
Eggplant - 1
Onion - 1, large
Tomato - 2
Green chilli - 1
Ginger garlic paste - 1 tsp
Chilli powder - 1 tsp
Cumin powder - 1/2 tsp (optional)
Coriander powder - 1/2 tsp
Garam masala - 1/2 tsp
Turmeric - 1/4 tsp
Cumin seeds - 1 tsp
Coriander leaves - to garnish
Salt - to taste
Oil - 1 tblspn
Method:
Roast eggplant in direct flames until all the sides are burnt and becomes mushy. Cool and mash them.
Finely chop onion, tomatoes and green chilli.
Heat oil in a pan, add cumin seeds. When it crackle, add chopped onions.
When
onion turns soft, add finely chopped tomatoes and green chilli. When
tomato turns mushy, add ginger garlic paste and sauté a minute.
Now,
add chilli powder, coriander powder, cumin powder, garam masala and
turmeric. Stir well till oil leaves on the sides for about 2-3 minutes.
Then, add the mashed eggplant, salt and give them a good mix. Cook for 5 minutes and garnish with coriander leaves.
Serve with rice or chapati.
