Chicken Clear Soup

Ingredients:
Chicken - 200 gms
Onion - 1
Carrot - 1/4 cup, julienned
Garlic - 3
Ginger - 1 tsp, julienned
Black Pepper - to taste
Spring onion / Celery / Coriander leaves - 1 tblspn
Salt - to taste
Butter - 1 tblspn
Method:
Heat little butter, add onion, carrot, ginger and garlic. Sauté for a minute.
Add chicken, pepper, salt and 4 cups of water in a vessel. Cover with a lid and cook until the chicken becomes tender. Or pressure cook for 4 whistles.
Strain the stock using a strainer. Keep the stock aside and shred the cooked chicken into small pieces.
Combine the chicken stock, shredded chicken and bring it to boil. Check for salt and add if required.
Cook on a medium flame for 5 mins. Add some spring onion or coriander leaves.
Serve hot!
Note:
- You can also add little carrot to the soup while serving.
- If you want it very thick, add little cornflour mixed with water.

In a pressure cooker or a pan heat little butter |
Add finely chopped ginger and garlic |
Add 1/4 cup of carrot and saute for few seconds |
Then, add the chicken pieces |
Saute for few seconds |
Add 4 cups of water or as required for making soup |
Add salt to taste |
And black pepper as required |
Cover with a lid and pressure cook for 4 whistles or till the chicken becomes tender |
Once the pressure subsides, open the lid |
Strain the stock using a strainer. Keep the stock aside.

And shred the cooked chicken into small pieces. |
Combine the chicken stock, shredded chicken and bring it to boil.

Check for salt and add if required. Adjust pepper as required. |
