Brinjal Thoran

Here brinjals are cooked just like usual thoran. We can use the same method to cook carrot, beetroot to get different taste.

Ingredients:

Brinjal - 5
Big Onion - 1
Red chilli - 4
Grated Coconut - 1/4 cup
Cumin - 1/2 tsp
Turmeric - a pinch
Mustard seeds - 1/2 tsp
Curry leaves - a sprig
Salt - as needed
Oil - 1 tblspn

Method:

Grind together coconut, cumin and red chilli without adding water.

Cut brinjal into small cubes and clean it.

Heat oil in a pan, add mustard seeds.

When it pops up, add chopped brinjal and curry leaves.

Sauté until it is done. Then, add in ground coconut masala, turmeric and salt. Stir well for 3 mins and transfer it to a serving bowl.

Keep all your ingredients ready
chopped and cleaned
Cut the brinjal into small pieces and clean it
grind coconut, chilli
Grind coconut, cumin and red chilli without adding water
do seasoning
Crackle some curry leaves and mustard seeds
chopped onion
Add in chopped onion and saute till it becomes translucent
saute brinjal
To this, add in chopped brinjal and stir fry till the brinjal is cooked
add turmeric, salt
Once it is cooked add in turmeric, salt
add ground masala
and ground paste.
saute for 3 mins
Saute for 3 mins and switch off the flame
Brinjal Poriyal
Serve!
