
Here brinjals are cooked just like usual thoran. We can use the same method to cook carrot, beetroot to get different taste.
Brinjal Thoran

Ingredients:
Brinjal - 5
Big Onion - 1
Red chilli - 4
Grated Coconut - 1/4 cup
Cumin - 1/2 tsp
Turmeric - a pinch
Mustard seeds - 1/2 tsp
Curry leaves - a sprig
Salt - as needed
Oil - 1 tblspn
Method:
Grind together coconut, cumin and red chilli without adding water.
Cut brinjal into small cubes and clean it.
Heat oil in a pan, add mustard seeds.
When it pops up, add chopped brinjal and curry leaves.
Sauté
until it is done. Then, add in ground coconut masala, turmeric and
salt. Stir well for 3 mins and transfer it to a serving bowl.
