Scrambled Egg Rice
Egg rice is one of the quick and easy recipes. This is not the Indo Chinese egg fried rice. It is something that every mom makes at home in olden days when chinese recipes were not popular. This recipe is mostly prepared when the kids don't like a particular curry or when they refuse to take food. This easy lunch box recipe can be made in a giffy. Not only for lunch it can be relished anytime as leftover rice can also be used for this.
Simple Indian Mom's Egg Rice

Simple Egg Rice

Prep Time: 2 mins | Cooking Time: 5 mins | Serves: 1

Ingredients:

Rice - 1 cup
Egg - 2
Onion - 1
Green chilli - 2
Ginger garlic paste - 1/2 tsp
Turmeric - 1/4 tsp
Mustard seeds - 1 tsp
Curry leaves - 2 sprigs
Salt - to taste
Oil - 1 tblspn

Method:

In a pan, heat little oil. Add in mustard seeds.

When mustards starts to pop, add in green chillies, onion and curry leaves. Sauté till onion becomes soft.

Add turmeric, ginger garlic paste and sauté till raw smell goes off.

Now, crack the egg and stir fry till it is cooked.

Add in leftover rice and salt. Sauté for 1 or 2 mins and remove from flame.

Serve.

Note:
  • Skip ginger garlic paste if your kid doesn't like it.
  • For adults add more chillies or pepper powder.

Keep all your ingredients ready

When it starts to splutter, add in chopped onion, green chilli and curry leaves

When onion becomes translucent, ginger garlic paste goes in
turmeric and salt
Add in salt and turmeric. If you have added salt while cooking, check it and add later
whisk the egg
Crack an egg and whisk it till both white and yellow incorporates well
pou the egg
Pour in whisked egg into the pan. You can also add the egg directly without mixing
scramble the egg
Wait for few seconds and scramble the egg
add rice
Add in left over rice and toss it
toss well
Cook for 1 to 2 mins and put off the flame
