Simple Egg Rice

Prep Time: 2 mins | Cooking Time: 5 mins | Serves: 1
Ingredients:
Rice - 1 cup
Egg - 2
Onion - 1
Green chilli - 2
Ginger garlic paste - 1/2 tsp
Turmeric - 1/4 tsp
Mustard seeds - 1 tsp
Curry leaves - 2 sprigs
Salt - to taste
Oil - 1 tblspn
Method:
In a pan, heat little oil. Add in mustard seeds.
When mustards starts to pop, add in green chillies, onion and curry leaves. Sauté till onion becomes soft.
Add turmeric, ginger garlic paste and sauté till raw smell goes off.
Now, crack the egg and stir fry till it is cooked.
Add in leftover rice and salt. Sauté for 1 or 2 mins and remove from flame.
Serve.

- Skip ginger garlic paste if your kid doesn't like it.
- For adults add more chillies or pepper powder.

Add in salt and turmeric. If you have added salt while cooking, check it and add later |
Crack an egg and whisk it till both white and yellow incorporates well |
Pour in whisked egg into the pan. You can also add the egg directly without mixing |
Wait for few seconds and scramble the egg |
Add in left over rice and toss it |
Cook for 1 to 2 mins and put off the flame |
Egg rice is ready to serve! |
