This is perfect one pot meal. It is quiet similar to paruppu sadham but bit varied due to the addition of vegetables. You can cook this in 10mins excluding the soaked time. I cook this mostly during weekends. If you feel lazy to cook during holidays, then this is your recipe. You can serve this with onion raitha and papad.
Lentil Rice With Vegetables
Ingredients:
Rice - 1 cup
Toor dal - 1/2 cup
Big onion - 1
Tomato - 1 or 2
Red Chilli - 2
Potato - 1
Brinjal - 2
Carrot - 1
Sambar powder - 2 tsp
Turmeric - 1/4 tsp
Salt - to taste
Mustard seeds - 1 tsp
Curry leaves - a sprig
Coriander leaves - to garnish
Oil - 1 tsp
Ghee - 1 tsp
Water - as required
Method:
Mix together rice and toor dal, wash and soak in 4 cups water for 20-30mins.
Cut potato into small cubes, brinjal and carrot into desired sizes. Put them in clean water until ready to use.
Finely chop onion and tomato and keep aside.
Heat oil in a pressure cooker, add in mustard seeds. When it splutters add curry leaves and dry red chilli.
Add in onion and stir well. When it becomes translucent add chopped tomato. Sauté until it turns mushy.
Then add all the vegetables and stir well for 1-2 mins. And then add sambar powder, turmeric and salt.
And add the soaked rice and dal along with the water. Add 1 more cup of water to it and mix well.
Once the rice is visible above water, close the lid and cook for 4 whistles.
When the pressure is released add little ghee and mix well. Garnish with coriander leaves.
Serve with raita and papad.
Note:
- Adding ghee will enhance its taste and you will get a nice aroma.
- You can also add peas and raw plantain to this.
