Kadai Mushroom Gravy

Ingredients:
Mushroom - 1/4 kg
Capsicum - 1
Onion - 1/2, cubed
Tomato - 1/2, cubed
Oil - 2 tblspn
To make a paste:
Onion - 2
Tomato - 2
Ginger - 1/2 inch piece
Garlic - 3
Chilli powder - 1/2 tsp, optional
Garam masala - 1/4 tsp, optional
Turmeric powder - 1/4 tsp
Cashews - 10
Salt - to taste
Oil - 1 tblspn
Water - 1 cup
Other ingredients:
Bay leaf - 1
Green chilli - 1
Ginger - 1/2 tsp, julienned
Coriander leaves - to garnish
For Kadai Masala:
Coriander seeds - 1.5 tblspn
Cumin seeds - 1/2 tsp
Red chilli - 3
Black pepper - 1/4 tsp
Cinnamon - 1/2 inch piece
Cloves - 2
Cardamom - 1
Method:
First dry roast the ingredients given for Kadai Masala. Grind it to a coarse powder.
Cut 1 onion, 1 tomato and capsicum into cubes. Roughly chop the other onion and tomato. Thinly slice mushrooms.
In a pan, drizzle little oil and sauté onion. Once onion is sautéed add ginger, garlic and cashews. Sauté for a minute.
Then, add tomato and sauté till it turns mushy. Add in chilli powder, garam masala(if adding), turmeric, salt and sauté for 30 seconds. Switch off the flame and allow it to cool down. Once cooled, blend well to a smooth paste.

Peel the outer skin of mushroom |
And remove the hairy part |
Cut them into thin slices |
In a pan, drizzle little oil and add the roughly chopped 1.5 onion, ginger garlic and cashews |
Saute till the onion become soft |
Add the chopped 1.5 tomatoes |
And salt to taste, this will also make the tomato to cook faster |
When the tomato turns mushy, add in 1/2 teaspoon of chilli powder |
and little bit of turmeric is added |
Add garam masala |
Saute for a minute and switch off the flame. Let it cook for sometime |
Cool this and take it in a mixer and grind it to a smooth paste |
Keep the ingredients required for kadai masala ready |
Dry roast the spices till a nice aroma comes |
and grind it to a coarse powder |
Cut the remaining half onion, capsicum into cube or into thin slices. Deseed the remaining half tomato and cut into cubes. Grate the ginger and slit the green chilli |
Saute the onion, capsicum and tomato for a minute |
Add in mushroom and saute for a minute |
Transfer them into a bowl |
Drizzle little oil in a pan, add in bay leaf |
Add the ground onion tomato and cashew paste. Saute for a minute and then add the freshly ground kadai masala |
Add water as required |
Once it starts to boil, add the mushroom and vegetables |
Once the mushroom gets cooked completely, add in grated ginger and slitted green chilli |
Garnish with coriander leaves |
Serve with chapati, jeera rice or any other main course of your choice! |
