There are numerous recipes to cook potato. But all of them are delicious. There are some variations even in cooking them. We
can directly fry potatoes in oil or boil at first and then add them
with the masalas. Both are delicious on their own. Isn't it? In this
recipe we are going to boil at first and toss them with the sambar
powder.
This is a simple yet perfect side dish for any curry. We can add either whole baby potatoes or chopped big one. But the main thing is it should not be overcooked.

Sambar Potato / sambar urulai varuval
Ingredients:
Potato - 2
Sambar powder - 2 tsp
Turmeric powder - 1/4 tsp
Fennel seeds / saunf - 1 tsp
Cumin - 1 tsp
Salt - as needed
To Temper:
Mustard seeds - 1 tsp
Urad dal - 1/2 tsp
Asafoetida - 1/4 tsp
Curry leaves - 1 sprig
Oil - 2 tblspn
Method:
Boil potatoes and cut them into small cubes.
Heat oil in a pan, add mustard seeds and urad dal.
When it splutters, add in cumin, fennel seeds, asafoetida and curry leaves.
Add in boiled potatoes.
Then add sambar powder, turmeric powder and salt.
Stir well for 4-5 mins.
Serve with your favourite rice. Enjoy!
