

Kothavarangai Paruppu Usili

Ingredients:
Kothavarangai / Clustered beans - 1/4 kg
Channa dal / Kadalai Paruppu - 1/2 cup
Red chilli - 4
Asafoetida / Perungaya podi - a generous pinch
Turmeric - 1/4 tsp
Salt - to taste
To temper:
Mustard seeds - 1 tsp
Cumin seeds / Jeeragam - 1/2 tsp
Curry leaves - a sprig
Method:
Soak
channa dal for an hour. Drain excess water and take it in a blender,
add red chilli, salt and asafoetida. Grind it to a coarse paste.
Grease an idli plate, place the ground dal on it and steam cook for 5 to 7 minutes. Crumble the cooked dal in a mixer.
Wash and chop the clustered beans. Then cook adding turmeric and salt till it becomes soft.
Heat oil in a pan, season with mustard seeds, cumin seeds. Once it crackles, add curry leaves.
Add the crumbled dal and fry for 5 minutes. Add in cooked beans and sauté for a 2 to 3 minutes. Switch off the flame.
Serve!
