If you ask me what is my favourite side dish in the world, I would probably say it's potato. I will never go tired preparing and eating potatoes. This one varies little bit from others due to the addition of tomato with the spices powders. I think you should try this easy potato sometime.
Ingredients:
Potato - 2
Big onion - 1 (large)
Tomato - 2 ( 1 if large)
Chilli powder - 1 tspn
Coriander powder - 1 tspn
Turmeric - 1/4 tspn
Ginger garlic paste - 1 tspn
Salt - as needed
Coriander leaves - to garnish
To Temper:
Mustard seeds - 1/2 tspn
Urad dal - 1/2 tspn
Channa dal / kadalai Paruppu - 1/2 tsp
Curry leaves - a sprig
Oil - as needed
Method:
Cook potatoes in boiling water and cut them into medium sized cubes.
Chop onion and tomato into small pieces.
Heat oil in a pan, add mustard seeds. When it started to crackle, add in urad dal and channa dal and curry leaves.
Add in onion and sauté until it becomes translucent. Then add in finely chopped tomato.
When it turns mushy, add ginger garlic paste, coriander powder, chilli powder, turmeric and salt. Stir well until the raw smell goes out.
Then add the potato and stir well for 4-5 mins.
Garnish with coriander leaves.
Serve with rice or chapati. Enjoy!
