Avarakkai Egg Poriyal

Prep Time: 10 mins | Cooking Time: 15 mins | Serves: 3 to 4
Ingredients:
Avarakkai - 1 cup
Egg - 2
Onion - 1
Tomato - 1
Chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Salt - to taste
For Seasoning:
Mustard seeds - 1 tsp
Urad dal - 1/2 tsp
Curry leaves - a sprig
Oil - 2 tblspn
Method:
Wash and chop the broad beans into half inch pieces. Pressure cook it for 3 whistles.
Heat oil in a pan, add in mustard seeds and urad dal.
When mustard seeds pops, add in chopped onion and curry leaves. Stir until the onion becomes soft and translucent.
Add in chopped tomato and saute till it turns mushy.
Now, add the cooked broad beans and stir fry for 1 min. Crack 2 eggs over it. Wait for 30 seconds and scramble the egg.
When the eggs are cooked and look like scrambled egg burji put off the flame and transfer it to a serving bowl.
Serve!

Heat little oil in a pan, add mustard seeds. When it begins to pop add urad dal |
When urad dal begins to change its color, add chopped onion and curry leaves. Stir fry for 2 to 3 mins till onion becomes soft |
Add in chopped tomatoes and cook till it turns mushy |
Once tomatoes becomes mushy, add in chilli powder, turmeric and salt to taste |
Now, add the cooked beans and stir fry for 2 mins |
Crack 2 eggs over it. Wait for 30 seconds |
Scramble the egg and make it like a egg burji |
When it reaches egg burji stage, turn off the flame and transfer it to a serving bowl |
