Are you tired of cooking usual veggies? Try pumpkin
a day. Lot of people decide its taste just by its look. They never go
for a try. I'm pretty sure it will work good for them too. Also, pumpkin is a great source of vitamin A. It's rich in vitamins, minerals but has very less calories.
Try it in your next meal. It can be one of the recipes worth trying.
Pumpkin Kootu
Ingredients:
Pumpkin - 1/4kg
Mustard seeds - 1 tsp
Curry leaves - 1 sprig
Oil - 2 tblspn
Salt - as needed
Water - 1 cup
To grind:
Coconut - 1/4 cup
Shallots / small onions - 8 to 10
Red chilli - 4
Cumin / jeerakam - 1/4 tsp
Method:
Blend together the ingredients listed in "to grind", set aside.
Peel the skin, remove seeds and cut the pumpkin into cubes about 1 inch piece.
Heat up oil in a wok, add mustard seeds.
When it starts to crackle, add cubed pumpkin and curry leaves. Sauté for 2 mins.
Add in 1 cup of water and close the lid. Cook on medium flame for 10 mins.
Add in the ground masala once it gets cooked. Cook for 2-3 mins and remove from flame.
Serve hot with rice.
Note:
- You can add finely chopped green chilli instead of red chilli.

Grind coconut, red chilli, onion and cumin to a coarse paste without adding water |
Heat oil in a pan, add mustards |
When it begins to crackle, add pumpkin and curry leaves. Saute for 1 to 2 mins |
Add a glass of water, cover and cook until done |
When it is cooked and water is reduced, add ground masala |
Add in salt |
Stir for 3 to 4 mins |
