Alfaham Chicken

Prep Time: 10 mins | Marinating Time:1 hr | Cooking Time: 30 mins | Serves: 2
Ingredients:
Chicken - 3/4 kg
Onion - 1
Tomato - 1
Ginger - 1 inch piece
Garlic - 4
Green chilli - 1
Pepper powder - 1/2 tsp
Hung Curd - 1/4 cup
Lemon juice - 1 tblspn (or 1/2 tsp vinegar)
Salt - to taste
For Bezar Masala:
Coriander seeds - 3 tsp
Fennel seeds - 1 tsp
Cumin seeds - 1 tsp
Red chilli - 5
Peppercorns - 1 tsp
Cinnamon sticks / Pattai - 1 stick
Turmeric powder - 1/2 tsp
Method:
Dry roast the ingredients given under "for bezar masala". Take the roasted ingredients in a blender and grind it to a smooth powder. Transfer it to a bowl.
Again in the same blender, take roughly chopped onion, tomato, green chilli, ginger, garlic and grind it to a paste without adding water.
In a large mixing bowl, take the cleaned chicken pat dry and add in hung curd, ground onion tomato paste, prepared bezar powder, pepper powder, lemon juice and salt to taste. Rub well to coat evenly into the chicken. Marinate the chicken for at least 1 to 3 hrs or overnight.
Preheat the oven to 400F and bake the chicken for 30 minutes. Take the chicken out in between, flip to the other side and baste the chicken with butter or oil.
Broil the chicken on high for 2 minutes to get a char on the top.
Serve hot with your favourite dipping sauce.

Note:
- I made this with medium spiciness which can be enjoyed by kids. If you want it to be more spicy, add more chillies and pepper.
- Temperature of oven to oven varies so baking time differs.

Add in onion tomato paste that we prepared earlier |
Add little pepper powder for extra spiciness |
Now rub well to coat evenly into the chicken. Marinate this chicken for at least 1 hour |
Line the baking tray with aluminium foil to avoid sticking to the bottom. Place the marinated chicken on the tray and sprinkle little oil on the top |
Preheat the oven to 400F and bake the chicken for 25 to 30 minutes on the middle rack(Temperature of oven to oven varies so baking time differs) |
Take the chicken out after 15 minutes, flip to the other side and bate the chicken with little butter on the top |
Broil the chicken on high for 2 minute to get a char on the top on the top rack of the oven |
Arabian Chicken is ready to serve |
Serve with your favourite dipping sauce! |
