Tapioca
is known as kappa in Malayalam. It can be cooked in many ways. In our
home we season the boiled kizhangu with grated coconut, green chillies
mustard etc. I will post the recipe soon. Coming to the tapioca puttu,
you can either squeeze its juice and cook or you can make a puttu flour
by adding little rice flour to the boiled tapioca.
Tapioca Puttu

Prep Time: 15 mins | Cook Time: 10 mins | Serves: 3
Ingredients:
Tapioca - 1/2 kg
Grated Coconut - 1 cup
Cumin - 1/2 tsp(optional)
Salt - to taste
Method:
Peel the skin of tapioca and grate them using a food processor or grater.
Mix well with salt and keep it aside for 10 mins. It will help to leave the excess water or milk.
Now squeeze it to extract its milk and cumin to this. Now the rest of the process is same as we do for rice flour puttu.
Add water to the bottom vessel of the puttu maker and let it boil for a minute.
Now place the holed disc inside the puttu maker. First spread some coconut followed by tapioca mixture. Alternatively fill it with coconut and tapioca until you reach the top of funnel. The top and bottom layer should be coconut.
Now push the bottom disc gently with the knife or with a spatula so that it comes out clean.
Serve with fish curry.
Note:
- If you don’t have puttu maker place the flour in idly pot and steam it for 10 minutes. This way you can use a bowl to get a shape.
- Adding cumin is optional.
- If you do not want it to be sweet add less coconut.

Now place the disc inside the hole and add coconut to it |
Add some tapioca after it |
Now, again spread some coconut and do it till the top end |
Now attach it to the vessel and steam for 10 mins |
Now gently push the puttu with the help of a knife or a spatula |
The puttu comes out neatly |
Its ready! |
