Snake gourd is a little well known vegetable. It is known as Pudalangai in Tamil. It has lots of vitamins and minerals. It has very less calories. So people who are trying to loss weight can add this vegetable often in their diet. It also stimulates the growth of hair and protects weak hair.
Ingredients:
Snake gourd / Pudalangai - 1
Onion - 1
Green chilli - 1
Split green gram - 1 tsp or (Channa dal - 1 tblspn)
Coconut - 2 tblspn
Cumin -1/2 tsp
Salt - as needed
To Temper:
Red chilli - 2
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Curry leaves - 1 sprig
Oil - 1 tblspn
Method:
Finely chop onions and green chilli. Grind together cumin and coconut with adding water.
Scrap the skin of snake gourd, slit and deseed them. Cut them into desired shapes.
Heat oil in wok, add mustard seeds, urad dal followed by red chilli and curry leaves.
Then, add green chilli and finely chopped onion. Stir well until it becomes translucent.
Add chopped snake gourd and the dal. Sprinkle little water and close the lid. Stir well in between.
Once done, add in ground coconut, cumin. Sauté for min.
Serve.
Note:
If you are adding channa dal, cook it before adding to the poriyal. Otherwise, add it during tempering process.

When snake gourd is cooked, add the ground coconut cumin |
Saute for 1 or 2 mins and remove from flame |
Serve with rice |
