Ivy gourd fry / Kovakkai fry is a popular Andhra Style side dish which goes well with sambar, rasam and almost anything. I know about this crispy deep fried method only through a meals served in Andhra mess. I found this method is easy and time saving as we are deep frying them. Recipe for Ivy gourd fry is below.

Ivy Gourd Fry

Prep Time: 10 mins | Cooking Time: 10 mins | Serves: 3

Ingredients:

Ivy Gourd / Kovakkai - 20
Rice flor / Corn flour - 2 tblspn
Besan flour - 2 tblspn
Chilli powder - 1 tsp
Turmeric - 1/2 tsp
Salt - to taste
Oil - to deep fry

Method:

Cut the ivy gourd lengthwise into four equal parts. Discard any red one present in it.

Take the ivy gourd in a mixing bowl, add in besan flour, rice, chilli powder, turmeric and salt to taste. Sprinkle little water and mix well to coat evenly.

Heat oil to deep fry and fry till the skin shrinks. Once fried transfer to a bowl.

Serve!

Note:
  • You can replace rice flour with corn flour.
  • If you don't have besan flour, skip it and add more rice flour.
  • Instead of deep frying, you can also stir fry with less oil.
