Avarakkai Egg Poriyal
Avarakkai egg poriyal is close enough to the avarakkai poriyal. Addition of egg makes it look like thoran after scrambling the egg. My MIL used to prepare drumstick leaves with egg which I like the most. So when my friend told about this poriyal, I tried it immediately with slight modification. It came out really good. My son thought it as a egg burji. It is a great way to nourish kids with healthy vegetables.

Avarakkai Egg Poriyal

Recipe Cuisine: South Indian | Recipe Type: Side dish
Prep Time: 10 mins | Cooking Time: 15 mins | Serves: 3 to 4

Ingredients:

Avarakkai - 1 cup
Egg - 2
Onion - 1
Tomato - 1
Chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Salt - to taste

For Seasoning:

Mustard seeds - 1 tsp
Urad dal - 1/2 tsp
Curry leaves - a sprig
Oil - 2 tblspn

Method:

Wash and chop the broad beans into half inch pieces. Pressure cook it for 3 whistles.

Heat oil in a pan, add in mustard seeds and urad dal.

When mustard seeds pops, add in chopped onion and curry leaves. Stir until the onion becomes soft and translucent.

Add in chopped tomato and saute till it turns mushy.

Now, add the cooked broad beans and stir fry for 1 min. Crack 2 eggs over it. Wait for 30 seconds and scramble the egg.

When the eggs are cooked and look like scrambled egg burji put off the flame and transfer it to a serving bowl.

Serve!

Note:
  • You can use any number of eggs according to your neeed.

Keep all your ingredients ready
chop and pressure cook beans
Wash and chop the avarakkai into half inch pieces. Pressure cook for 3 whistles adding enough water

Heat little oil in a pan, add mustard seeds. When it begins to pop add urad dal

When urad dal begins to change its color, add chopped onion and curry leaves. Stir fry for 2 to 3 mins till onion becomes soft
add in tomato
Add in chopped tomatoes and cook till it turns mushy
chilli powder, tumeric and salt
Once tomatoes becomes mushy, add in chilli powder, turmeric and salt to taste
cooked beans
Now, add the cooked beans and stir fry for 2 mins
crack eggs
Crack 2 eggs over it. Wait for 30 seconds
scramble the egg
Scramble the egg and make it like a egg burji
put off the flame
When it reaches egg burji stage, turn off the flame and transfer it to a serving bowl
