Spinach Stir Fry

Spinach needs no introduction as everyone very well knew the health benefits of them. They have anti-inflammatory and anti-cancerous properties and are important for healthy eye-sight, hair, bone and skin. It provides iron, vitamins, minerals and proteins.

Spinach Stir Fry

Ingredients:

Spinach - 1 bunch
Coconut - 3/4 cup
Small Onion - 3/4 cup(25-30 approximately)
Red Chilli - 3
Green Chilli - 2
Cumin - 1/2 tsp
Mustard seeds - 1 tsp
Curry leaves - 1 sprig
Salt - to taste
Oil - 2 tblspn

Method:

Chop green chilli into small pieces. Cut spinach and clean it properly.

Grind coconut, cumin, red chilli, and 6-7 onions. Chop the remaining onions.

Heat oil in a pan, add mustard seeds. When it starts to splutter, add curry leaves and green chillies. Sauté for 15 seconds.

Add the chopped onions and sauté until it becomes translucent.

Now add the spinach and stir well. It will soon start to shrink in size during cooking. When spinach dwindles to about one fifth the quantity, add the coconut masala. Sauté for 2 to 3 minutes and remove from flame.

Note:
  • Adjust chillies according to spiciness required.

Saute for 3 minutes and remove from flame
