Kathirikai Poriyal / Brinjal Fry


Brinjal can be used to prepare variety of recipes. In this method we cook it with the ground masala. It takes very less time to cook. Here is the recipe...


Ingredients:

Brinjal - 4 or 5
Onion - 1
Turmeric powder - 1/4 tsp
Mustard seeds - 1 tsp
Curry leaves - 1 sprig
Oil - 3 tblspn
Salt - to taste

To Roast and Grind:

Red chilli - 3 or 4 (adjust to taste)
Channa dal / Split Bengal Gram / Kandalai Paruppu - 2 tsp
Fennel seeds / Perunjeeragam - 1 tsp
Cumin seeds - 1/2 tsp
Pepper - 1/2 tsp

Method:

Chop onions and keep aside.

Dry roast the ingredients listed to grind and grind it to a coarse powder.

Cut off the stem of brinjal and slice it lengthwise. Wash it.

Heat oil in a pan, add mustard seeds. When it started to crackle, add onion and curry leaves.

When it becomes translucent, add brinjal. Sauté until it is cooked. Sprinkle little water if necessary.

Once it is cooked, add ground powder, turmeric and salt. Sauté for 2-3 mins.

Transfer it to a serving bowl.
